PRESENCE OF MESOPHILIC, PSYCHOPHILIC AND COLIFORM MICROORGANISM IN DIFFERENT SAMPLES OF POULTRY PRODUCTS

ABSTRACT

Products from poultry sources can be a route of introduction of pathogenic bacterium. Therefore the microbiological quality of these products should be appropriate for consumption. With the aim to establish the sanitary-hygiene quality of the poultry products available at the commercial facilities 47 samples of the following poultry products were analyzed: 5 thigh samples, 5 samples of liver together with gizzard, 15 mechanically boned meat samples, 7 sausage samples, 5 hotdog sausage samples, 5 hamburger samples, and 5 covered chest samples. These samples were submitted to counting standard in plates of mesophilic and psychrophilic aerobic heterotrophic microorganisms, as well as determination of the most probable number of total and fecal coliforms.The results of the analized samples were shown in minimum and maximum values observed for each microorganism and for each chicken product. According to Standard Brazil Procedures only the maximum value of fecal coliforms is determined; this study detected one sample (2.1%) of liver and gizzard and 3 sausage samples (6.4%) out of the standard established by the legislation for these microorganisms, showing that from the 47 analyzed samples only four (8.5%) were out of the standard.
