The theoretical perspective is based on Marxist and the bibliographic study is used as methodological instrument for data collection. The results of the investigation reveal that the understanding of the work process in cutting cane is essential in elucidating the illness and deaths of workers. Furthermore, in sugarcane flexibilization, both the reduction of jobs and the increase in labor intensity are widespread; by a variety of intensifying strategies, such as payment for production. The article concludes that the worker’s body, whether due to illness, death or physical-psychological traumas, materializes the overexploitation of the workforce in cutting cane, exposing the destructive character that the accumulation of capital of the sugarcane agroindustry has on its workers.
