Food safety and traceability: the BSE case

The BSE crisis, in addition to other hazards in the food industry, increased the concern about food safety and traceability, in particular. The article aims to investigate the costs and benefits of a traceability system in the beef production chain, induced by the BSE (Bovine Spongiform Encephalopathy) crisis. As an intermediary goal, this paper reviews and defines the concept of traceability, with emphasis on the food industry. The traceability system is characterized by its degree of comprehension, product path, the definition of the traceable unit and the information management throughout the chain. The institutional environment and the organizations strategic actions also influence the choice of a specific traceability system.
