Development of colorimetric altered intelligent packaging incorporated with anthocyanins: a critical review

Abstract

Intelligent packages are those that have significant improvement with respect to communication and to the consumer, since they provide dynamic feedback about the actual quality of the product.The present review aimed to analyze the concept of intelligent packaging that uses polymers incorporated with anthocyanins as a base for colorimetric alteration, as well as discussing aspects of scientific development. A critical analysis of the scientific production that deals with the processes used for the development of such packaging was performed. The production process is structured and controlled based on the current consumer demand, as they are increasingly alert to the safety and quality of the food available for consumption. In this sense, the development of new intelligent packaging with colorimetric indicators or sensors is directly related to the form of production, requiring a standardization of its production and parameters, thus providing insight from various professionals, who end up developing promising new technologies.
